I'm not that far into the story, yet (I'm leveling up at the Collanbal Ruins). Where does the game call Noah a he? Noah, as far as I know, is female.

Yea, I'm almost positive that Noah is a girl. One look at her face, and you just know.

Noah is constantly referred as a he when the game gives its little tutorial about stealing with her. She is female, but the translators must've screwed up somewhere.

Yeah, I'm aware of her being female. That translation error annoys me quite a bit. It's not like it was simply one error but Noah was referred to as a male in three seperate parts of that tutorial.

Probably just an oversight. If Noah had a more girlish name, they'd get it right.

No, I think they just mistranslated it or something. Kind of like Shabon in Suikoden III whom was listed as both male and female in the game.
